Die Fässer des 10 jährigen Pike Creek sind den extremen, kanadischen Wetterbedingungen ausgesetzt da sie im freien gelagert werden, in den Wäldern von Ontario. So dehnt sich das Holz im Sommer bei Temperaturen um die 27 Grad Celsius stark aus, um dann im Winter bei bis zu -15 Grad Celsius wieder zu kontrahieren. Das heißt, die Fässer tauschen so mit der Umgebung und dem Destillat sehr intensiv Aromen aus. Zum abrunden des Geschmacks wird in Rumfässern gefinisht.
